Carrot and Coriander Soup - Recipe

Ingredients
1 onion
1 Small sweet potato
3 medium carrots
1 large tomato
1 Cube of Vegetable Stock
handful of fresh coriander
What you will need
Large Pan
Blender
Sharp Knife
Chopping Board
To start dice one onion and place it in a pan with a splash of water or coconut oil. Whilst frying the onion start to chop the sweet potato and carrots into small cubes, then add this to the pan. Now dice the tomato and pop that in the pan with the other ingredients. Next boil 400ml of water and mix that with the vegetable stock cube until the stock has dissolved then pour this into the pan. Once the carrots and sweet potato are soft, turn off the heat and add in a handful of fresh coriander. Place the ingredients in a blender and blitz together until smooth. Garnish with fresh coriander and enjoy!!
I love how quick and simple this recipe is, and honestly it taste amazing. I always feel so fresh and energised after having a bowl of this soup and it truly is so super filling!! If you have any left over you can pop in it a container and place it in the freezer.
